Suitable for baking, salads, fermenting and tea.
As a herbal remedy, caraway is used as a tea – either as a cold or warm water infusion – as an alcohol tincture, as a powder, and also as an infusion added to bath water.
Caraway seeds are rich in essential and fatty oils (approx. 3–7%), tannins and bitter substances. In folk tradition, caraway has long been used to support digestion, ease a feeling of bloating, soothe the stomach and stimulate the appetite.
In the Middle Ages, people wore small bags of caraway around their necks to ward off witches and demons. For the same purpose, a bowl of caraway seeds was placed under children’s beds to ensure peaceful sleep without nightmares. In some regions it was seriously believed that caraway protected against theft and guarded property, so it was sprinkled into purses, money boxes, the house, the cattle shed and outbuildings.
