Kala namak<\/b>\u00a0or\u00a0Nalla Uppu<\/b>\u00a0is a kiln-fired\u00a0rock salt\u00a0used in\u00a0South Asia\u00a0with a sulphurous, pungent-smell. It is also known as \u201cHimalayan black salt\u201d,\u00a0Sulemani namak<\/i>,\u00a0bit lobon<\/i>,\u00a0kala noon<\/i>, or\u00a0pada loon<\/i>\u00a0and manufactured from the salts mined in the regions surrounding the Himalayas.<\/p>\n

The condiment is composed largely of\u00a0sodium chloride\u00a0with several other components lending the salt its colour and smell. The smell is mainly due to its sulfur content. Because of the presence of\u00a0Greigite\u00a0(Fe3<\/sub>S4<\/sub>,\u00a0Iron(II,III) sulfide) in the mineral, it forms brownish pink to dark violet translucent crystals when whole. When ground into a powder, its color ranges from purple to pink.<\/p>\n

Kala namak has been praised in\u00a0Ayurveda\u00a0and used for its perceived medical qualities.<\/p>\n

Kala namak is used extensively in\u00a0South Asian cuisines\u00a0of India, Pakistan, Bangladesh and Nepal as a condiment or added to\u00a0chaats,\u00a0chutneys, salads, all kinds of fruits,\u00a0raitas\u00a0and many other savory Indian snacks.\u00a0Chaat masala, an Indian spice blend, is dependent upon black salt for its characteristic sulfurous hard-boiled-egg aroma. Those who are not accustomed to black salt often describe the smell as similar to rotten eggs.<\/sup>\u00a0Kala namak is appreciated by some\u00a0vegans\u00a0in dishes that mimic the taste of eggs. It is used, for example, to season\u00a0tofu or avocado to mimic an egg salad\u00a0or\u00a0deviled eggs.<\/sup><\/p>\n

Kala namak is considered a cooling spice in\u00a0Ayurveda\u00a0and is used as a\u00a0laxative\u00a0and digestive aid.<\/sup><\/sup><\/sup>]<\/a><\/sup>\u00a0It is also believed to relieve\u00a0flatulence\u00a0and\u00a0heartburn.
